1 lb of wild boar sausage, sliced into thin circles
1 lb of shrimp (no tail)
2 bay leaves
2 bell peppers, chopped
2 large celery, chopped
3 garlic, minced
1 medium onion, chopped
1 tbsp oregano
½ parsley, chopped and fresh
1 tsp thyme
1 cup tomato, chopped
1 small can of tomato paste
6 cups of chicken stock
3 cups of jasmine rice (or rice of your choosing)
1 tsp pepper
½ tsp cayenne pepper
1 tbsp cooking oil
½ scallions
1 tsp garlic powder
Instructions:
Step 1:
Heat oil in a large skillet about medium high
Add in wild boar sausage and cook through until sausage is browned
Take sausage out and put aside to cool off
Step 2:
Now add chopped bell peppers, celery, onion and minced garlic to pan
Cook vegetables until the onion is translucent and the peppers are soft
Step 3:
Add jasmine rice to the skillet
Add in the 6 cups of broth
Combine chopped tomato and tomato paste in the skillet
Step 4:
Toss in cayenne pepper, regular pepper, garlic powder, thyme, oregano
Bring to boil for about 2 min
Add bay leaves
Cover, reduce heat, and simmer for about 20 min
Step 5:
Add in shrimp and cook for about 5 min. Careful not to over cook!
Stir in fresh parsley and scallions
