Ingredients:
- 1 tbsp olive oil
- 1 duck breast
- 1 onion, chopped
- 2 garlic gloves, diced
- 2 tsp ground cinnamon
- 2 tsp plain flour
- 1 cup of red cooking wine
- 2 cans chopped tomatoes
- 1 flavored chicken stock cube
- 1 tbsp rosemary
- 2 bay leaves
- 1 tsp sugar
- 2 tbsp milk
- Gnocchi
- 2 tbsp grated Parmesan cheese
Step 1:
- Heat oil in large skillet
- Brown duck breast on both sides, about 5 min each side
- Remove breast and set aside
Step 2:
- Add onions to pan and cook them until they are translucent, about 5 minutes
- Add in minced garlic and cook about 1 minute
- Stir in cinnamon and flour. Proceed to cook for another minute
Step 3:
- Return duck to pan
- Add wine, tomatoes, stock, herbs, sugar, rosemary, and bay leaves
- Bring to a simmer then lower heat and cover for about 1-2hrs. You want to check on the duck and make sure you are not over cooking it
Step 4
- Heat a pot of water to boiling. Once boiling, start cooking gnocchi
- Take duck out and shred with two forks. At this point the duck should easily shred
- Add the shredded duck back into the sauce
- Add milk
- Let simmer for another 10 minutes
Step 5:
- Mix cooked and drained gnocchi in with duck sauce
- Enjoy with some freshly grated Parmesan cheese!
