  • 1 tbsp olive oil
  • 1 duck breast
  • 1 onion, chopped
  • 2 garlic gloves, diced
  • 2 tsp ground cinnamon
  • 2 tsp plain flour
  • 1 cup of red cooking wine
  • 2 cans chopped tomatoes
  • 1 flavored chicken stock cube
  • 1 tbsp rosemary
  • 2 bay leaves
  • 1 tsp sugar
  • 2 tbsp milk
  • Gnocchi
  • 2 tbsp grated Parmesan cheese

Step 1:

  • Heat oil in large skillet
  • Brown duck breast on both sides, about 5 min each side
  • Remove breast and set aside

Step 2:

  • Add onions to pan and cook them until they are translucent, about 5 minutes
  • Add in minced garlic and cook about 1 minute
  • Stir in cinnamon and flour. Proceed to cook for another minute

Step 3:

  • Return duck to pan
  • Add wine, tomatoes, stock, herbs, sugar, rosemary, and bay leaves
  • Bring to a simmer then lower heat and cover for about 1-2hrs. You want to check on the duck and make sure you are not over cooking it

Step 4

  • Heat a pot of water to boiling. Once boiling, start cooking gnocchi
  • Take duck out and shred with two forks. At this point the duck should easily shred
  • Add the shredded duck back into the sauce
  • Add milk
  • Let simmer for another 10 minutes

Step 5:

  • Mix cooked and drained gnocchi in with duck sauce
  • Enjoy with some freshly grated Parmesan cheese!
